Number of Servings: 10

Ingredients

    2 cans lima beans, drained and rinsed
    2 small onions, chopped
    2 red bell peppers, chopped
    3 medium/large carrots, sliced thinly
    2 stalks celery, sliced thinly
    2 small potatoes, chopped
    between 3 and 6 cups chicken broth, to desired thickness
    1 1/2 tsp marjoram
    1/2 tsp oregano
    1/4 - 1/2 tsp basil
    1/2 tsp sea salt
    1/2 tsp pepper
    1 cup half and half

Directions

Add all ingredients except half&half to soup pot. Bring to a boil, then reduce heat, cover, and simmer for 25-35 minutes or until vegetables are tender.

Serves 10.
