Introduction

Use a package of 15-bean soup mix to make a delicious, filling, vegan chili easily in your crockpot. Great for those cold winter evenings! Ingredients

    1 package (20 oz) 15-bean soup mix
    1/3 cup picante sauce
    2.5 tsp salt
    1/2 tsp pepper
    1 tbsp garlic powder
    1 tbsp garlic, minced
    1/2 tbsp chili powder
    1/2 tsp cumin
    1/2 tsp oregano
    3 bay leaves

Directions

Makes 16 servings (1/2 cup each).

1) Soak beans overnight in crockpot.
2) Drain and add fresh water (enough to cover beans plus a couple of inches).
3) Add all ingredients EXCEPT picante sauce
4) Cook on high 7-8 hours
5) About 30 minutes before serving, add picante sauce.

Note: This gets better and better the longer it cooks. I sometimes leave it on low for up to 24 hours.

    This was pretty good, although it was a little salty, and I had to add a lot of extra chili powder to make it taste like chili. I couldn't taste the picante. A good base recipe for experimenting with though. - 3/8/10
