This is a hearty meat sauce using turkey breast meat for protein. Freezes well. This is a hearty meat sauce using turkey breast meat for protein. Freezes well.
Number of Servings: 32


    40 0z. lean ground turkey
    1 C chopped onions
    1 C chopped celery
    1 C chopped bell pepper
    16 oz. drained canned mushroom stems and pieces
    3- 4.25 oz. cans sliced or chopped olives (I use chopped)
    2- 28 oz cans diced tomatoes with juice
    1- 28 oz can tomato puree
    1- 6 oz can tomato paste
    8 oz water
    1 Tbsp Italian seasoning
    1 Tbsp minced garlic
    1 tsp oregano
    1 tsp chili powder
    1 Tbsp salt (or to taste)
    1 tsp pepper (or to taste)


Brown turkey and place in large pot. Chop and saute onions, celery, and bell pepper. Add to turkey. Add all other ingredients and mix well. Cook for at least 1 hour. Works well if you cook it for several hours in a slow cooker.
This sauce tastes better the longer you cook it. Even better the next day.
Makes 32 servings, .5 cup each.
