Ingredients

    1 large sweet potato
    2 med white potato
    1 med onion
    4 tbsp canola oil
    1 lb leftover prime rib ends
    thyme
    salt to taste (3-4tsp probably at minimum)
    pepper to taste

Directions

Cut potatoes into 1/4" cubes, and dice onion. cook potatoes in microwave on high for 5 minutes. Heat cast iron skillet, and add oil. Sautee onions till clear. Add potatoes and stir together and mush flat. Cook a total of 20-30 minutes, every 5-7 minutes using a metal spatula to scrape the browning potatoes off the pan and to turn the top, uncooked part, under to the pan. Once potaoes are cooked all the way thru. In the meantime, cut the prime rib into 1/4" dice. When potatoes are done, add thyme and salt and pepper to taste. Stir in the prime rib, and cook long enough to hea tthe meat and then serve.
