Ingredients

2 lbs skinless boneless chicken breast (4 lg breast)
1 cup Swanson Chicken broth (fat free)
1 - 28 oz can diced Italian tomatoes
2 packages Knorr Garlic and Herb sauce mix
1- 12 oz package frozen pea pods
1- 8 oz package sliced fresh mushrooms
pan spray (for browning chicken)
Directions
In a large skillet brown chicken breast on both sides, then add tomatoes and 1 cup chicken broth, cover and let simmer approximately 20 minutes.
Remove chicken pieces and whisk in Knorr sauce mix. It will only take about a minute for this to start thickening if the tomatoes and broth on on a low boil. Add mushrooms and then put chicken back into mixture and cover. Cook on low / med for another 25 minutes, adding pea pods during last 10-12 minutes. Serve over rice or pasta.
8 servings 1/2 breast each w/sauce and vegetables
