Introduction

This is favourite way of cooking French Beans in our family.We string these and slice them very finely into tiny rounds.These are then seasoned and cooked on a low flame and if desired garnished with raw shredded Fresh Coconut for added flavour.I do not add any. Ingredients

    500gms.fresh tender French Beans
    5-7 hot Green Chillies
    Salt to taste
    1 dash Black Pepper Powder
    1cup Water
    SEASONING
    1 tbsp.Sesame Oil
    2tsps.Black Mustard Seeds
    1tsp.Turmeric Powder
    1 tsp.Asafoetida(Hing)Powder
    GARNISHING
    1 small bunch Fresh Coriander(Cilantro)Leaves
    0.25 cup shredded Raw Coconut(Optional)

Directions

PREPARATION
String and remove the ends of the French Beans.Wash in a colander and allow to drain for some time.Slice into thin strips horizontally and keep aside.Slit the hot Green Chillies lengthwise and finely mince the Fresh Coriander Leaves.
METHOD
Heat Oil in a wok and lower flame.Add Black Mustard Seeds and when these sputter add the Turmeric and Asafoetida Powders in the order given.Add 0.5 cup of plain Water and the finely chopped Vegetable and mix well.Add the Salt to taste and slit Green Chillies and mix well.Cover with a lid and pour a little Water over it.Cook on low flame till done.Sprinkle in the Black Pepper Powder. Mix well and allow flavours to assimilate for a further 1-2 minutes. Garnish with finely chopped Fresh Coriander Leaves . Remove from heat and serve hot as a side dish with your meal.
