Introduction

Number of Servings: 4

Ingredients

    1 Lb Chicken (I used thighs)
    1/4 cup All-Purpose Flour
    1 tbsp Cooking Oil
    1/2 Red Pepper, chopped
    1/2 Yellow Pepper, chopped
    1/2 Garlic clove
    1 tsp Curry Powder
    1/4 tsp White pepper
    1 can (14.5 oz) Diced tomatoes, undrained
    1/2 tsp Patsley
    1/4 tsp thyme
    1 cup Water

Directions

Dust chicken with flour. In a Dutch oven over medium heat, brown the chicken in oil. Remove and set aside chicken. Saute fresh peppers and garlic in drippings until tender. Add curry and pepper. Mix well. Add chicken, parsely, thyme, tomatoes and water. Cover and bake at 375 for 45-50 minutes or until chicken juices run clear. Serve over rice if desired.
