Ingredients

    1 pound ground beef, browned/sauteed

    1 cup chopped raw celery

    1/2 cup chopped raw green (or red) pepper

    1 cup raw onion, chopped

    2 TBsp sugar, granulated (can use artificial sweetener instead if needed)

    1/2 cup whole grain flour (white works too if you don't have whole grain)

    1 cup water

    1/2 cup cider vinegar

    2 TBsp yellow mustard

    1 cup ketchup (may need more to suit your taste)

    1 tsp salt

    1 dash black pepper

    25 or more whole grain crackers (can substitute whole wheat bread or buns)




Directions

In an 8 quart or larger pan (wider = better) used for sauteeing or stir-frying, brown ground beef with 1/2 cup of water (this makes the beef less chunky) on high heat. When there is no pink meat showing, reduce heat to medium. Chop raw onion, pepper, and celery and toss into beef. Add remaining 1/2 cup of water, vinegar, flour, sugar, mustard, salt, and pepper. Mix until well- distributed. Add ketchup to taste, being sure to mix it in well. Cook until vegetables are of desired consistency - crunchy = less time or soft = more cokking time.

Serve as a dip on crackers or spoon onto whole wheat bread or buns.
