Introduction

Just threw this together and Robert and I both loved it, so I quickly wrote down the ingredients. Just threw this together and Robert and I both loved it, so I quickly wrote down the ingredients.
Number of Servings: 16

Ingredients

    1 lb lean ground beef, (I rinsed and drained mine)
    1 large onion diced
    3 large cloves garlic, minced
    2 cups sliced carrots
    2 cups sliced celery
    1 large green onion, chopped
    4 cups low sodium, fat-free beef broth
    4 cups low sodium, fat-free vegetable broth
    1 can tomato soup
    2 cups water
    2 bay leaves
    1 tbsp Italian herb mix
    salt & pepper to taste (I used 1 tsp. salt)

Directions

Brown beef, add all vegetables and saute until starting to soften. Add broths, soup, water and seasonings. Simmer 1 hour.

I did not actually measure every vegetable, but I measured the final result and I had 24 cups of soup.

You could, of course, add lots more veggies to this soup if you want it thicker.

16 1.5-cup servings.
