Ingredients

nonstick cooking spray
1 3/4 cups whole wheat white flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
2 egg whites
3/4 cup oil
1/4 cup jam (we like to use seedless jam)
Directions
preheat oven to 400. Line muffin pan wiht paper cups, spray cups with cooking spray.
mix flour, sugar, baking powder, salt, and cinnamon in a medium bowl.
Mix the eggs, milk, and oil in another bowl.
Add egg mixture to flower mixture. Stir until wet. Spoon 1 tbs of batter into each muffin cup. Spoon 1 tsp of jam on top of the batter in teh muffin cups. Spoon remaing batter over the jam.
bake 15 to 18 mins or until the tops are lightly brown.
let stand a few min to cool.
