Introduction
My mom has made this for years. It's a favorite in our house, and it's so easy to prepare. You make it in the crock pot, so you can put it on in the morning before work, and by the time you get home it's done. I was very pleasantly surprised to find out that it's a relatively low-cal/low-fat meal! And so delicious. The pork chops are so tender, they pretty much fall apart. My mom has made this for years. Ingredients

3 cans Bavarian style sauerkraut (do not drain!)
1 pkg. boneless pork chops (we use a pkg with 5 or 6 chops, weighing 3-4 oz each.)
5-6 medium Russet potatoes, scrubbed and sliced 1/4-inch thick (we like to leave the peel on, but you don't have to)
salt and pepper to taste
Directions
In a skillet over medium-high heat, sear the pork chops
Place the chops in a 4-qt crock pot or slow cooker.
Layer potatoes over the chops.
Pour the sauerkraut over the top of the potatoes.
Cook 6-8 hrs. on high
It's really that simple.

Incredible because it IS so easy and because it tastes SO good. My brother and sister-in-law have told me that they do this method often. Could not believe how tender the pork was, yet how firm the potatoes were (no mush). I added carrots just to throw in a little more nutrition. Will do often. - 2/28/11

I won't rate it since I haven't made it exactly as is, BUT I have made it with just the pork chops and sauerkraut and served it over mashed potatoes. That was incredible in itself, and cooking potatoes along with the pork and sauerkraut would be even better! Will definitely try it this way! - 11/5/13
