Ingredients

    1/4 cup olive oil
    1 medium onions, chopped medium fine
    3 cloves garlic, minced
    about 1 inch ginger root, peeled and grated
    3 teaspoons mustard seeds
    3 teaspoons cumin seeds
    2 teaspoons coriander seeds
    2 teaspoons turmeric
    2 teaspoons fenugreek powder
    1 teaspoon ground pepper
    2 teaspoons salt or to taste
    1 cups red lentils
    1/3 can coconut milk (light coconut milk is fine)
    1 tomato
    4 carrots
    1 can chicken broth or vegetable stock,
    about 5 cups water
    1 lemon

Directions

Heat oil and saute onion until tender. Add garlic and ginger and cook for about a minute. Then add the spices and let them heat up for a minute or two. Next, add the lentils, coconut milk, broth, tomato, carrots, and water. Let simmer about 45 minutes. Add lemon juice. Season further to taste.

Makes about 6-8 1 cup servings.

Note: Soup can be blended for a different consistency.
