Introduction

Recipe is modified version found at ilovetoeatgoodfood.blogspot.com. The original recipe called for a 1/2 cup of sliced carrots as well. I don't like them, so I left them out. I upped the spinach from 1/2 c to 1 c. It calls for fresh grated Parmesan on top. I didn't include that here, so it should be added separately for calories. Could also substitute turkey sausage. Ingredients

    6 c Swanson Natural Goodness Chicken Broth
    1/4 tsp Italian seasoning
    2 cloves garlic, minced
    1/2 c onion, chopped
    1/2 lb Hot Italian Sausage
    1 c zucchini, chopped
    1 can (14oz) sliced or chopped stewed tomatoes (no salt)
    1 (9oz) pkg cheese-filled tortellini
    1 c spinach, trim stems
    Fresh Parmesan, grated (optional)

Directions

In large saucepan, brown sausage, then saute onion and garlic. Add broth, Italian seasoning, zucchini, tomatoes. Cook over medium-high, heat to boil. Add tortellini, reduce heat to medium. Cook 15 minutes or until pasta is done, stirring occasionally. Add spinach at five minutes remaining. Sprinkle with fresh Parmesan.
