This peanut sauce is the perfect mix of sweet, sour, savory and spicy -- great with a variety of dishes including chicken, tofu or noodles. This sauce gets its heat heat from tuong ot (Vietnamese chili and garlic sauce); chili flakes can substitute. Ingredients

    1/2 c. natural peanut butter
    2 Tbsp soy sauce
    2 Tbsp rice wine vinegar
    2 cloves garlic
    1/3 c. sugar
    1/2 c. hot water

    Chili garlic sauce (tuong ot), to taste

Directions

Microwave the garlic cloves on high for 30 to 45 seconds until fragrant. Combine all the ingredients except for the water in a food processor and pulse to combine. The mix will look a little grainy. Add hot water slowly, pulsing to combine, adding enough water to bring to a smooth consistency, adding more water if needed.

Pour out of the food processor and mix in chili garlic sauce, adjusting to taste.

Makes 16 1 tablespoon servings.
