Introduction
This is super easy, low in calories and flavorful. I make variations with Italian sausage and different veggies, but I wanted to keep it basic here. Use your imagination! Also, sometimes I add some more spices to the sauce, but this sauce is great on it's own.Zucchini Slices baked in MUIR GLEN ORGANIC PIZZA SAUCE topped with mozzarella and Parmesan cheese. Ingredients

3 C Zucchini, sliced
1 1/2 C Muir Glen Organic Pizza Sauce
1 C Mozzarella Cheese, shredded
4 TB Parmesan cheese, grated
Directions
1. Preheat oven to 350
2. Thoroughly wash zucchini.
3. Cut into slices (not too thin, not to thick; 1/2 cm)
4. Place Zucchini in baking dish
5. Cover with sauce
6. Sprinkle with Mozzarella
7. Bake covered for 35
8. Remove cover and bake until cheese is browned.
9. Sprinkle with Parmesan cheese and serve.
Makes 4 servings.
