Introduction

This is super easy, low in calories and flavorful. I make variations with Italian sausage and different veggies, but I wanted to keep it basic here. Use your imagination! Also, sometimes I add some more spices to the sauce, but this sauce is great on it's own.
Zucchini Slices baked in MUIR GLEN ORGANIC PIZZA SAUCE topped with mozzarella and Parmesan cheese. I use Muir Glen because it has no added sugar and is thick and delicious.

Ingredients

    3 C Zucchini, sliced
    1 1/2 C Muir Glen Organic Pizza Sauce
    1 C Mozzarella Cheese, shredded
    4 TB Parmesan cheese, grated

Directions

1. Preheat oven to 350
2. Thoroughly wash zucchini.
3. Cut into slices (not too thin, not to thick; 1/2 cm)
4. Place Zucchini in baking dish
5. Cover with sauce
6. Sprinkle with Mozzarella
7. Bake covered for 35
8. Remove cover and bake until cheese is browned.
9. Sprinkle with Parmesan cheese and serve.

Makes 4 servings.

    Very Good
    Yummy! Like lasagna with no pasta -- tasty and gluten-free. :) Next time, I'll cook the zucchini ahead of time and cut down the baking time. There was too much water in the pan. Otherwise, it made for a great dinner. - 3/28/12

    I can't get pasta down, but maybe if I shredded it in the food processor I could do this. Same with the zucchini and some vegetarian burger. I also could add lots of shredded veggies.
