Ingredients

1/2 cup Water,
1/2 cup Onions, chopped (remove)
1/4 cup Carrots, raw,chopped
1 tsp instant beef bouillon granules
1 tsp Curry powder, 1 tsp
2 cloves Garlic, minced
1/4 cup Brown Rice, long grain, .UNCOOKED
1 tsp Canola Oil,
4 ozs Beef, sirloin,cut across the grain
2-3 TBS frozen Peas,
1/2 medium size Tomatoes, .
Peanuts if desired.
Directions
In a saucepan add water, onion, carrots, bouillon granules, curry powder, cumin, minced garlic and salt(IF DESIRED).
Bring to a boil and stir in rice. Cover and simmer over low heat for 20-25 minutes or until rice is done.
In a skillet sprayed with nonstick cooking spray, over medium-high heat, add vegetable oil. When hot, add beef strips and cook 5-6 minutes or until done.
Combine and stir beef strips, peas and tomato mixture into rice mixture. Cover and simmer about 3 more minutes until rice and peas are tender.
Top with chopped peanuts IF DESIRED.
Original recipe says serves 1 but it is enough for 2 servings.

Very good and will make again. I didn't put quite as much curry in it because I was afraid it would be too spicy for my kids. This made it too mild. Forgot to add the peas, but was still good. Was a little confused about the cumin (mentioned in the instructions, but not in the ingredients list). - 5/24/10
