Introduction

Ingredients

    1 lb. extra lean ground beef 96/4
    1 green bell pepper
    1 red bell pepper
    1 medium white onion
    cumin
    chili powder
    oregano
    basil
    black pepper
    diced tomatoes (3 15oz cans or 1 28oz can and 1 15oz can)
    stewed tomatoes 1 15 oz can
    1 can black beans
    1 can great northern beans
    1 can light red kidney beans

Directions

brown beef and set aside. Place beans in a strainer and rinse thoroughly.
In a big pot combine all other ingredients. You can adjust seasoning to your preference. Add cooked beef. Stir in the beans. Let cook on med/low for 30-40 min. until the peppers are tender.

    I substituted 1.25 lb of ground turkey and added some of my own special seasonings that I like in my chili. I also cooked in the slow cooker all day so it was ready when we got home. This turned out great and I was able to freeze leftovers for next week! - 2/18/10

    One of the best low fat chili recipes ever! I added 2 chipotle peppers in adobo sauce and a handful of frozen corn to up the veggies. Froze for lunches and every time I heat in the office I get coworkers asking who made the great smelling lunch! - 10/29/14

    I made this for dinner last night and we really loved it. I used my tomatoes from my garden instead of canned. I am sure this will taste just as good with canned. I will be making this often. Thank you - 10/4/11
