8 oz boneless, skinless chicken breasts, cut into pieces
1/2 tsp salt
1 Tbsp lemon juice, divided
1/4 cup plain fat free yogurt
1/2 Tbsp apple cider vinegar
1 tsp minced garlic
1/8 tsp ground ginger
1 1/2 tsp curry powder
1/2 tsp chili powder
Directions
Sprinkle the chicken the salt, then 1/2 tablespoon lemon juice. Rub the salt and juice into the meat.
In a bowl, combine the yogurt, remaining 1/2 tablespoon lemon juice and remaining ingredients. Marinate the chicken in the mixture; turning several times to make sure they are well coated. Marinate chicken for several hours or an entire day (the ideal). Keep covered and refrigerate.
Preheat the broiler. Remove chicken from the marinade. Place chicken on a baking dish in the broiler and cook for 8 to 10 minutes. Turn the chicken and continue cooking for another 10 to 15 minutes or until done.
