Introduction
A traditional italian recipe made healthier by turkey bacon and more convenient by frozen peas. Simple, rich, and delish! When we're splurging, we make this with real bacon, fresh peas, and serve it with Farfalle (butterfly) pasta. When we're "being good", we serve it with whole grain pasta. The "pasta water" mentioned in the recipe is just a scoop of the water being used to boil the pasta (it has startch to thicken the sauce and a bit of salt, so it's a great way to give yourself a bit more sauce but with less calories and heaviness than if you add more olive oil). There is less liquid than with the normal recipe because we're using a less fat-filled bacon. Still, it tastes pretty good! Ingredients
-
--2 T Olive Oil
--1 C chopped onions
--12 slices Turkey Bacon
--2 C frozen sweet peas, thawed
--1/2 C pasta water
--1/4 hand grated Parmesan (tastes MUCH better than canned)
--Black pepper to taste
Directions
Saute onions in oil on medium heat until they are soft and golden. Add bacon (because this is Turkey bacon, you'll be glad you have the olive oil -- the sauce needs it to taste like a sauce, so don't skimp) and cook through. Add peas and cook through. Add the 1/2 cup of pasta water, raising heat in order to cook it down quickly. Remove from heat and fold in cheese. Pour onto and mix into pasta (this is great with "butterfly" pasta or spaghetti). Add pepper to taste -- since the pasta water had some salt in it and there is parmesan cheese in the dish, you probably won't need any added salt.
