Mostly from the Trader Joe's cookbook, but changing some of the veggies to our favorites and adding chicken. Veggies can be changed and chicken left out, it's all about the sauce! Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    Trader Joe’s Masala simmer sauce, 2.5 cup
    Zucchini, 1.5 cup, sliced
    Mushrooms, fresh, 1.5 cup, pieces or slices
    Cauliflower, raw, 1 cup
    Broccoli, fresh, 1 cup, chopped
    Yogurt, plain, low fat, 0.5 cup (4 fl oz)

Directions

Cook the veggies in the simmer sauce, the chicken in a separate pan. Combine all and add yogurt to finish. Serve over rice if desired.
