Ingredients

    Cucumbers - peeled and slice
    Onion - sliced and rings separated or diced
    EQUAL parts - oil, vinegar, splenda sugar - Use as much or little as you like (I usually use about a cup of each for 3 large cucumbers
    approx. 8 1 cup servings

Directions

Slice Cucumbers and onions (may dice onion if preferred) place in bowl. Mix 1 cup oil, vinegar, splenda or sugar substitute (Salt and pepper to your liking) in a jar, close and shake. Poor over veggies and store in refrigerate over night for best absorption and taste. Stir occasionally and right before serving to keep liquid mixed well. Serve little liquid with this dish.

Retain leftover juices and reuse, just add fresh veggies. Cauliflower, tomatoes, broccoli, etc. may be used......... Use your imagination.
