Ingredients

    1 can of Pink Beans (or Red Kidney Beans)
    2 cups of Water
    1 tbsp of vegetable oil
    1/4 cup chopped green bell peppers
    1/8 cup chopped onions
    1 large potato (peeled and cubed)
    1 can of Goya tomato sauce
    1/2 tsp of Adobo
    1 packet of Sazon (Goya)
    1/4 tsp black pepper
    1 tsp sea salt

Directions

1. Combine all ingredients into a pot on high and bring to a simmer. (5-6 mins)

2. When sauce starts to boil, lower heat to med-low and continue to cook uncovered for sauce to thicken. (14-15 min)

3. Stir and place a lid over the beans to finish cooking. (5 mins)

Makes approx. 4 -1/2 cup servings

    Delicious!! Just like my mother in law makes except she ALWAYs left out the one ingredient when she passed it on. - 4/13/11
