Introduction

Uses shredded cauliflower in place of rice to lower the carbs and calories. First time I made it was really BLAND, but remembered to add seasoning second time around and tasted much better! Ingredients

    2 c. shredded (or finely chopped) cauliflower
    1 c. broccoli florets
    1/2 c. cottage cheese (I used non-fat)
    1 wedge light laughing cow cheese
    season salt or your seasoning of choice

Directions

Place shredded cauliflower and broccoli florets in microwave safe dish with small amount of water (~1/4 cup). Cover and microwave until vegetables are fork tender. (Microwave times may vary - I cooked mine about 3 minutes. You don't want mush!) Meanwhile, blend the cottage cheese, laughing cow cheese, and your seasonings in blender. (My Magic Bullet worked perfectly!) Once vegetables are cooked, drain water, and pour on your "cheese" sauce. Pop back in microwave for one more minute to heat the sauce, and ENJOY!

Sort of a low cal take on cheesy rice. I play up the greens with broccoli, zucchini, asparagus, artichoke, spinach - whatever you have on hand!
