Introduction

High fiber, vegan and packed with veggies! High fiber, vegan and packed with veggies!
Number of Servings: 8

Ingredients

    1 lb dry small red beans, presoaked
    2 tbsp chili powder
    2 tbsp garlic, chopped
    2 cups carrots, sliced/diced
    2 cups diced celery
    2 cups chopped onion
    2 cups sliced mushrooms
    2 roasted sweet peppers, diced
    tap water
    1 tbsp Bragg's Liquid Aminos

Directions

Heat up olive oil in soup stock pan. Add onions, celery, garlic and mushrooms - saute, cover with lid and let onions sweat for about 10-15 minutes. Add rest of ingredients and 4 cups of water. Let simmer for at least an hour. I basically let this cook for a couple hours to develop flavors. Keep adding water as needed. Makes 16 cups. Serving size is 2 cups.
