Ingredients

    Marinade:
    3/4 cup raw soybeans
    3/4 cup raw wheat berries (both cooked until tender, then cooled)
    1 tsp dill
    1/4 tsp dry mustard
    1/2 cup cider vinegar
    1/2 cup mayonnaise
    4 tbsp lime juice
    1/4 tsp basil
    2 Tbsp white wine
    1/2 cup fresh parsley, chopped
    2 cloves garlic, crushed

    1 scallion, diced
    1 carrot, diced
    1 cucumber, diced
    1 red onion, diced
    1 green pepper, diced
    1 stalk celery, diced

    1 cup cottage cheese (2%)

Directions

Combine marinade ingredients, add beans & berries and let marinade for 15-20 minutes.
Combine all ingredients.
Toss and serve
