Introduction

Vegetable soup with tofu & udon noodles, adding miso paste for flavor. Vegetable soup with tofu & udon noodles, adding miso paste for flavor.
Number of Servings: 3

Ingredients

    1 T. vegetable oil (or other neutral oil)
    1/2 Onion, diced
    1/2 stalk Celery, diced
    3 Carrots, chopped
    1/3 container extra-firm Tofu
    1/4 cup Green beans
    1/8 cup frozen spinach
    3 cups Water
    1 cup Chicken broth
    3 tsp. Miso paste
    1/3 package (3 oz dry) Udon noodles

Directions

Cook noodles according to package instructions. When done, drain and rinse with cold water, and set aside.

Saute onions & celery in a small amount of oil over low heat. When soft, about 5 minutes, add carrots and saute another few minutes. Add tofu, saute for 1 minute, then add chicken broth and water. Add green beans & spinach. Turn up heat to bring to a boil, then reduce heat and simmer 10 minutes.

Mix miso paste with broth or water, then add gradually.

Add udon noodles, reheat them through, then serve.
