Introduction

This is a single skillet dish. I called it Spanish Chicken because we serve with Spanish Rice. I understand if someone objects!

I also warm up La Tortilla Wheat tortillas. Yum.

Ingredients

    2 chicken breasts (I cooked ours in the same skillet used for the recipe
    ~3-4 carrots grated in blender=~1 cup
    chopped red onion
    Ortega Mild Salsa Thick n' Chunky
    1 can black beans (12oz)

Directions

Cut cooked chicken into cubes. Return to skillet. Add Olive Oil. Add carrots (grated in blender) and chopped red onions to skillet. Saute. Add black beans and salsa. Heat through
