Introduction
Pork and hominy [posole] stew, green chilis simmered together for a rich warming dinner. Best served with a fresh cold/room temp topping of diced avocado, tomato, cilantro, onion, and jalapeno to tase. This is one of very few dishes I would put in a slow cooker! Ingredients

Pork loin, trimmed and cut into ~1/2 to 1" cubes
diced onion
cumin, salt pepper, mexican oregano
Garlic salt
2 small cans fire roasted mild chilis
2 cans [4 oz] green salsa
1 can drained, rinsed yellow hominy
One large potato diced small
chicken broth
Directions
Brown pork cubes in as little oil as possible. Combine remaining ingredients and simmer slowly until all is done. This can be done in a slow cooker for a few hours, definitely not an all day thing. Season to taste - I tend to put more salt and cumin than the average person.
To serve, I love to put a mound of chopped tomato, avocado, onion, jalapenos and cilantro - kind of a deconstructed quacamole in the center of the bowl and pour soup over it, maybe a squeeze of lime over the top. SErve with fresh, handmade corn tortillas
I think it will easily serve 6, possibly 8.
