Introduction

A very tasty and slightly spicy Italian take on the typical potato soup A very tasty and slightly spicy Italian take on the typical potato soup
Number of Servings: 3

Ingredients

    1/4 cup heavy cream
    2 3/4 cups chicken broth
    1/2 pound spicy Italian sausage
    1 medium russet potato
    2 cups chopped kale
    1/4 tsp. salt
    1/4 tsp. crushed red pepper flakes

Directions

Cook the sausage in skillet. Combine the chicken stock and heavy cream in pot over medium heat. Add sausage to the soup. Slice the potato into thin slices and then quarter the slices. Add the slices to the soup. Add the chopped kale. Add the salt and red pepper to the soup. Let the soup simmer for about 1 hour. Stir the soup occasionally.

3 servings as an entree. Can be 4 smaller servings.

    Very Good
    A bit heavy on the calories, or so it seems, but it's a nice expansion of the usual potato soup. - 5/31/07
