Introduction
Sweet spicy curry Sweet spicy curryNumber of Servings: 4
Ingredients

400g Skinless chicken breast
100g Red peppers
100g green peppers
100g yellow peppers
50g sultanas
20g curry powder
10g chili powder
spray oil
chicken stock cubes 2
400g can stewed tomatoes
Directions
Chop chicken into 1" pieces
Chop peppers and onions into 1" approx pieces
Make stock cubesup to 250ml with hot water
Spray a wok with a couple of sprays of oil.Add peppers and onions.
Sprinkle 2 tsp curry powder over and cook on highish heat stirring till browned andslightlt charred.
Remove from pan
Spray pan again and add chicken
Sprinkle the rest of the curry powder over and cook for 10 mins
or till chicken has cooked through.
Add veg to pan, with chilli powder (your choice of strength) and tomatoes.
Stir through,add most of the stock but leave some in case you need to add more later.Add the sultanas,turn down to a low heat and stir occasionally, leave for approx 60 mins,till reduced and thickened.
Serve with rice or naan bread (add the extra calories for this)
