Introduction

This is a basic oatmeal pancake recipe, but I've tweaked it with the spices, soy and wheat flour and flax meal. Most pancake recipes call for butter in them, but the flax meal is a great, healthy substitute. Skim the pan lightly with butter for cooking, if you wish but you don't need any more butter than that. Ingredients

    1C Oatmeal, quick or old-fashioned
    1/2 C Whole wheat flour
    1/4 C Soy flour
    4T Milled flax seed
    1T Sugar, raw, granulated or brown
    1T Ground cinnamon
    1t Nutmeg
    1/2t Baking soda
    1C Buttermilk (lowfat, or 1T lemon juice in 1C skim milk - let sit for 5 minutes)
    1 Large Egg

Directions

Using a 1/4 cup measure, scoop the lightly blended mixture onto a hot pan or griddle that's been lightly coated with butter. Do NOT overmix the batter, and be sure you're ready to cook the pancakes right away after blending in the milk and egg. If the mixture is too runny, add more flour. If it's to thick, add additional milk. Makes 8 cakes (4 servings).
