Casserole ingredients
* 1.5 cups nonfat milk
* 1/4 cup packed brown sugar
* 1 tablespoon unsalted butter
* 1/2 teaspoon salt
* 1 cup quick-cooking oats
* 2 tablespoons ground cinnamon
* 1 cup peeled chopped apple
* 1/2 cup chopped dried apricots
* 2 tbsp chopped pecans
* 1/2 cup raisins
* 2 tablespoons dried cherries
Cinnamon Oat Nut Topping Ingredients
* 1/4 cup packed brown sugar
* 1 tablespoon ground cinnamon
* 2 tablespoons chopped pecans
* 3 tablespoons oats
Directions
Preheat the oven to 350 degrees F. Grease six mini casserole dishes.
Combine the milk, brown sugar, butter and salt in a heavy saucepan over medium heat. Heat (do not boil) until the butter is melted. Add the oats to the pan and simmer until thick. Add cinnamon, apples, apricots, pecans, raisins and cherries, stirring to combine. Divide into the 6 prepared mini casseroles.
Combine the remaining brown sugar, cinnamon, chopped pecans and oats to make the Cinnamon Oat Nut Topping. Sprinkle over each casserole and top with a pat of butter.
Bake at 350 degrees for 20 to 30 minutes. Makes 6 servings.
