Introduction

Ingredients

3 cups prepared brown rice
1 lb beef tip round cut into bite size pieces
2 TB vegetable oil
salt and pepper to taste
1 large onion sliced into strips
3 large tomatoes sliced into strips
1 jalapeno pepper
1/4 cup distilled white vinegar
1 tsp soy sauce
1TB dried parsley
Directions
1. Prepare the rice according to package instructions.
2. While the rice is cooking, heat oil in a frying pan over medium-high heat. Season the meat with salt and pepper. Fry the meat until just cooked, and the juices begin to release. Remove the meat from the pan, then cook the onion until they are transparent. Stir in the tomatoes and jalapeno pepper; cook until the tomato softens. Return meat to pan and pour in vinegar, soy sauce and rice. Cover and cook until beef is done, about 3 minutes. Season to taste with salt and pepper and sprinkle with parsley to serve.
