Introduction

Number of Servings: 5

Ingredients

    15 oz of boneless skinless chicken breast
    6 cups chopped mushrooms.
    1 large onion, chopped.
    5 cloves of garlic, diced.
    3/4 cup of chicken broth
    1 ~ 6oz can of tomato paste.
    6 oz of red wine.
    2 tbsp. quick-cooking tapioca
    2 tbsp. fresh basil, diced
    2 tps. salt
    2 tps. black pepper


Directions

In a 4-5 quart slow-cooker place mushrooms, onion, garlic. Top with the chicken pieces.
Combine the rest of the ingredients in a bowl and pour over chicken.

Cook on low setting 5 hours...or on high for 3 hours.

Typically this is served over rice, noodles, whatever your fancy is.

    Yes, it is good. I always add about 2 T chopped jalapeno pepper to all my soups and casseroles. It seems to add flavor, is not hot, and eliminates the need for extra salt. - 3/22/11

    Incredible!
    This recipe is excellent. For having such a simple ingredient list, the flavor is fantastic. I figured that it was probably the WINE! Definitely would recommend this recipe. It's even better the next day as leftovers. - 10/19/10
