I adapted a recip from Healthy Cooking feb march 2010 issue page 59. I did my best to follow the recipe exactly, though the ingred. were an estimation on some, due to spark people ingredient list options. Number of Servings: 8

Ingredients

    1 lb. lean ground beef (at least 90%)
    1 Large Green Pepper
    1 medium Onion
    2 garlic cloves
    2 cans reduced sodium beef broth
    2 cans diced tomatoes
    1 can tomato sauce
    1 c. frozen corn
    1/4 cup tomato paste
    2 tsp. italian seasoning
    1/4 tsp. pepper
    2 1/2 cups spiral pasta
    1/2 shredded Paramesan Cheese

Directions

In a large sauce pan, cook beef, ground pepper, onion and garlic over medium heat; drain.

Stir in broth, tomatoes, tomato sauce, corn, tomato paste, Italian seasoning, and pepper. Bring to a boil. Stit in pasta, return to a boil.

Reduce heat; cover and simmer for 10-12 min. or until pasta is tender. Sprinkle with Paramesan cheese.

Serving size: 1 1/3 cup.

Diabetic exchange: 2 lean meat, 2 vegetable, 1 1/2 starch
