A great way to use up leftover mashed potatoes. A great way to use up leftover mashed potatoes.
Number of Servings: 4


    1.5 c mashed potatoes (left over is better than fresh)
    1 egg
    1/4 c. flour


Whip all ingredients together until smooth. Plop dollops onto a 350 degree griddle. Do not try to make them flat. Cook a few minutes on the first side. Flip and then push the cooked part down until the cake is flat. Cook a few minutes more. Flip again to cook the raw batter that was exposed by pushing it down.
