Introduction

Ingredients

    1 tuna (canned in water)
    1 white onion
    1 red or yellow bell pepper
    1 white or red potato (small)
    salt
    pepper
    turmeric

Directions

This colorful recipe makes about 4 servings (about 1/2 cup)

1) Chop both the onions and the potato.
2) Chop the red pepper into small chunks.
3) Drain the tuna. Set aside.
4) Sauté the onions and potato until nice and soft.
5) Add the turmeric, salt and pepper.
6. Add the red peppers to the onion/potato mix. Sauté until all is nicely golden.
7) Add the tuna and stir until well blended with the onion, peppers and potato. (The longer is sautés, the better this is.)

Serve with brown rice and peas or edamame. Really a great leftover, warmed the next day for lunch!!
