Full of flavor and so satisfying for something that has the same calories as a lean cuisine! Inspiration from a meal I had at Bahama Breeze that totally won me over! I eat this at least twice a week. Ingredients

    Ingredients:

    Corn Tortillas, 2 tortilla, medium (approx 6" dia)
    Tilapia filet, 4 oz
    Romaine Lettuce (salad), 0.5 cup, shredded
    Mangos, .25 cup, sliced
    Cucumber (peeled), .25 cup, pared, chopped
    Red Ripe Tomatoes, 10 cherry
    Jalapeno Peppers, 1 pepper
    Garlic, 1 clove
    Limes, .5 fruit (2" dia)
    Cilantro, raw, 3 tbsp
    Onions, raw, 2 tbsp chopped
    Beans, black, .25 cup

Directions

Mash the black beans and spread them over the two corn tortillas and bake at 400 degrees for 5 minutes.
Sprinkle blackened seasoning or MS DASH spicy seasoning over the tilapia filet and cook in skillet sprayed with PAM until done.
Flake fish and divide among the two tostadas. Top the fish with the shredded lettuce.

In food chopper put the tomatoes, onion, garlic, jalapenos, 1/2 tsp cumin and cilantro and chop it all up. put in bowl and add chopped cucumber, chopped mango and squeeze of lime.

Put the salsa over the lettuce and enjoy.

This is very healthy, easy and VERY filling so you don't feel like you are being weight conscience!

    Incredible!
    Awesome! Was as easy as it sounded. I sprinkled a little queso cheese crumbles over the top. I do recommend putting tostadas in oven BEFORE putting beans on it to keep it crunchy. - 1/8/13
