Ingredients

-1tbsp Canola Oil
-1 medium yellow onion, chopped fine
-2 cloves garlic, minced
-1/2 tsp tumeric
-1/2 tsp ground cumin
-1/2 tsp garam masala
-1/4 tsp black pepper
-1 cup red lentils, rinsed
-4cups water
-2 cups peeled, diced sweet potatoes
-1/2 tsp salt
Directions
Heat oil in a saucepan. Add onion and garlic and cook for about 5 minutes.
Stir in all spices except salt. Cook 1 more minute.
Stir in lentils and water. Cook over medium-low heat for 15 minutes while stirring occasionally.
Stir in potatoes and cook 30 more minutes until potatoes and lentils are tender.
Stir in salt.
Serve over rice or with Indian flat bread. I served it over 1 cup of rice.
*I measured my entire batch and it was equal to 4 cups when all was said and done. In that case this recipe makes 4 servings with each serving being equal to one cup.
