Ingredients

    Just like banana bread, but I add diced apple and cinnamon for an extra kick. To knock off a few calories, I find that using Splenda instead of sugar works very well.

    Here's what exactly I use:
    3 soft bananas
    1/2 c butter
    1 c sugar or Splenda
    3 eggs
    2 c whole wheat flour
    1 tsp baking soda
    3 tsp cold water
    1 tsp vanilla
    pecans, chopped, to taste
    1 apple, peeled & diced
    cinnamon, generous sprinkling

Directions

Preheat oven to 350 degrees.
Mix everything in a medium or large mixing bowl.
Coat two aluminum loaf pans with cooking spray.
Fill each with mixture about half way.
Bake for one hour at 350 degrees.

Enjoy with cream cheese (my personal favorite), yogurt, or butter! :-)
