    1 can Black Beans
    1 sm can sweet corn
    1 sm can chopped green chiles
    1 pkg Uncle Ben's Chicken Brown Ready Rice
    1/4 cup 2% cheddar cheese
    2 tbsp light sour cream
    1 tsp Southwest Chipotle Seasoning


Open and drain all cans. You may want to drain & rinse black beans. Dump all cans in a saucepan and heat on med low heat until hot. Cook ready rice in microwave according to package and add to saucepan. Add cheese, sour cream & seasoning & stir. You can eat as a side dish or add leftover chicken & pour it into a baking dish, top with more cheese and bake it as a casserole.
