Number of Servings: 7

Ingredients

    1 1/4 lb 96% lean ground beef
    1 1/2 C black beans
    1 C frozen corn
    1 C chunky salsa
    1 can fire roasted tomatoes
    1 C Fast and Natural Brown Rice
    3/4 C Low Sodium 99% FF chick broth
    cumin and chili powder to taste

Directions

Makes 7 1/2 servings
1 C= 1 serving

Brown ground beef, in a stock pot, drain all fat. Add all other ingredients and bring to a boil. Put lid on pot and cook until rice is done and most/all liquid has been absorbed. About 10 mintues.

Serve with a little shredded cheese and light sour cream
