Introduction
A not-too-rich version of sag paneer. Paneer is an Indian cheese which doesn't melt; you can find it in local Indian groceries. Methi (dried fenugreek leaves) are a MUST for this dish. Ingredients

3 lbs fresh spinach
8 oz paneer
4 Tbs Kastoori Methi (dried fenugreek leaves)
2 Tbs canola oil
1 large onion, chopped
2 serrano chiles, minced
1 tomato, chopped
1/2 Tbs. grated ginger
1 1/2 Tbs. minched garlic
3 tsp ground cumin
1 tsp turmeric
2 tsp lemon juice
2 tsp salt
11/2 c. fat free half and half
1 c. 2% milk
1 tsp garam masala
Directions
Microwave spinach until hot, drain and chop coarsely.
Heat canola oil in a large saucepan. Add onions and cook until starting to brown--do not burn. Crush fenugreek leaves and add to pot, stir, and cook a minute. Add chiles, ginger, garlic, cumin powder, turmeric, tomato, lemon juice and salt. Cook 10-15 minutes.
Add spinach, cook 5-10 minutes.
Using a stick blender, pulse mixture until slightly pureed. Do not over-process. It should still have texture, not be like baby food.
Add paneer, half & half, milk, and garam masala, heat through.
Makes 8 1-cup servings. Serve over hot basmati.
