    1-1/4 cup bran cereal
    1 cup buttermilk
    1 egg
    1/2 cup unsweetened applesauce
    2 tbsp molasses
    2 tsp vanilla extract
    1 cup whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 dash salt


Preheat over to 425F.
Line 12 cup muffin tin with papers.
Cover cereal with buttermillk and set aside.
In a large bowl, mix egg, molasses and vanilla.
In another bowl, combine dry ingredients, then add to egg mixture and stir until just blended.
Add cereal - buttermilk mixture and blend well.
Spoon batter into 12 muffin tins, place in pre-heated oven for 15-20 minutes.
