    1-1/4 cup bran cereal
    1 cup buttermilk
    1 egg
    1/2 cup unsweetened applesauce
    2 tbsp molasses
    2 tsp vanilla extract
    1 cup whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1 dash salt


Preheat over to 425F.
Line 12 cup muffin tin with papers.
Cover cereal with buttermillk and set aside.
In a large bowl, mix egg, molasses and vanilla.
In another bowl, combine dry ingredients, then add to egg mixture and stir until just blended.
Add cereal - buttermilk mixture and blend well.
Spoon batter into 12 muffin tins, place in pre-heated oven for 15-20 minutes.

    really good and moist I added mango and did 1/2 rolled oats and 1/2 bran cereal and put orange juice with the milk. really moist - 4/11/11

    these are great! I sometimes add a tbs of cocoa and some cinnamon for a different taste. I bake them in mini muffin pans. Almost forgot! You can used wheat bran instead of cereal. - 6/11/11

    Yummy! I made these and added 2 tablespoons Splenda Brown sugar blend for a little extra sweetening. Just enough without leaving an aftertaste. Thank you for sharing this great recipe! - 9/30/07
