Ingredients

    1 lb pork tenderloin (fat cut off)

    2 tsp Smart Balance Oil
    1 tsp cumin
    1 tsp dried oregano
    1 tsp chili powder
    1/4 tsp salt
    freshly ground black pepper

    1/3 cup yellow mustard
    2 tbsp sweet relish
    1 tbsp minced shallot

    12 2-inch King Hawaiian slider rolls
    3 slices reduced-fat Swiss cheese, each cut into 4 triangles
    lettuce

Directions

Preheat oven to 450F.

Put pork on baking sheet and rub with oil/spice mixture. Roast until internal temp reaches 155F. (About 15-20 min.)

Stir mustard, relish and shallot together.

Slice pork and place on roll with 2tsp mustard mixture. Add cheese and lettuce. Enjoy!
