Introduction

My mom used to make the salmon loaf without the soup and just spread it on top at the end of baking. I love how moist and flavorful this turns out with the milk and soup mixed in. Ingredients

    2 cans (14.75 oz) pink salmon, drained
    1 sleeve Saltine Crackers, crushed
    2 eggs, lightly beaten
    1 can cream of mushroom soup
    1/2 cup evaporated milk
    1 tsp each onion powder, garlic powder, and dried parsley

Directions

Heat oven to 350. Grease loaf pan.
Place salmon in large bowl and flake with fork.
Mix in crushed crackers, beaten egg, soup, milk, and spices. (I just use my hands). Spread into prepared loaf pan. Bake about 45 minutes.
I slice this into 8 servings.
