Introduction

My tart take on this sweet and sour side dish for the holiday season uses fresh or frozen fruit. Prepare this and keep in the refrigerator for up to a week. You can add nuts or mint. Ingredients

    1 (20 oz ) can HyTop crushed pineapple in juice, undrained
    1 (4 serving size) pkg sugar free black cherry gelatin
    2/3 cup Splenda
    1/2 pound whole cranberries

Directions

Put cranberries in a medium saucepan with 1 cup of water. Bring to a boil and cook until the berries pop. Stir in the gelatin powder. Add the undrained pineapple, stir to combine. Add the Splenda and stir until dissolved.

Cool slightly and pour into a 5 cup mold.

Makes 4 cups. 8-1/2 cup servings.
