Introduction

Ingredients

    onion, one medium chopped
    one clove garlic, chopped
    one can diced tomatoes, undrained14.5 oz.
    3/4 cup brown rice, uncooked
    1-1/4 cup water
    1 roasted chicken from deli,
    boned and skined
    salt and pepper to taste


Directions

Spray large skillet with Pam olive oil.
Sauté onions and garlic until onions are clear.
Add rice, tomatoes water and saffron.
Reduce heat and simmer until rice is cooked, stirring occasionally (add water if needed).
stir in chicken and serve.
Makes approxamately 6 one cup servings
