Number of Servings: 10

Ingredients

    500 grams Chicken Mince
    250 grams raw prawns (Frozen coles brand)
    Valcom Laksa Paste
    2 tins Carnation Light & Creamy Coconut Milk
    1 tin Bean Sprouts
    5 teaspoons Chicken Stock (salt reduced)
    5 cups water
    1 packet Changs Rice Vermicelli Noodles
    1 Capsicum Diced
    1 Zucchini Diced
    1 Large Carrot sliced shaved thin (use a pealer)
    3 Large florets of broccoli, chopped.

Directions

1. Put noodles in a bowl and pour hot water and leave to soak for 10 minutes
2. Cook Chicken mince in wok with all the laksa paste
3. Add prawns when chicken in almost cooked
4. Add Chicken stock, and all the vegetables. Cook for 5 minutes or until vegetables are cooked
5. Add coconut milk, and bring to the boil then simmer for 5 minutes
6. Put noodles in a bowl, add some bean sprouts then ladle soup into the bowl (approx 2 cups is one serve)

    Incredible!
    Left out the prawns simply because the cook doesn't like them. But we all rated it just as good as the high fat version at our local restaurant. Change the vegetables to what is on hand. Will repeat and share. Thanks MHANDLEY13 - 2/21/13
