Introduction

Ingredients

    6 cups water
    1 1/2 cups of grits (may use quick grits)
    1/2 tsp salt, preferably kosher
    1 Tbs minced garlic
    1 1/2 oz of sharp cheddar cheese grated (1/3 cup)
    1/3 cup half and half

Directions

In a large saucepan, over medium high heat, bring the water to a boil and slowly stir in the grits salt, and garlic. Lower the heat, cover; and simmer, stirring occaqsionally, until the grits are thick and soft, about 10 minutes. Wisk in the cheese and the half and half. You can keep the grits hot in a water bath, stirring occasionally, for up to 1 hour. More water may be whisked in to thin the consistency of the grits, whick will thicken as they sit.
